At a time when Andre Soltner, of Lutece, was introducing French cuisine to New York, star-chef Guy Ivaldi and his wife Jacqueline created their charming French country inn in the woods of Flanders, New Jersey. In the decades following, Silver Spring's sophisticated staying power was based on Chef Ivaldi's masterful renditions of classic and innovative French cuisine coupled with Jacqueline's charming, expert stewardship of the dining room. Silver Spring Farm is still going strong today - with Guy in the kitchen, and Jacqueline arm-in-arm with her son Jean-Jacques (who trained at the renowned Hotel School in Lausanne, Switzerland). Together they graciously attend to the grandchildren of the Ivaldi's early patrons. Truly, Silver Spring is New Jersey's "grande dame" of la cuisine francaise. If you yearn to dine in a country French inn on dishes like Canard roti sauce poivrade or Lobster Tourville au Champagne followed by classic desserts like Mousse au Chocolat, warm tarte tatin or souffle au chocolat or Grand Marnier don't fly to France. Silver Spring Farm, in Flanders, is a lot less expensive and much closer.
